Some of our favourite wines from out west come from Margaret River Lo-Fi queen, Josephine Perry. Her delicious Rosé is made from dry-grown Grenache, hand-harvested and left on skins for a day before basket-pressing to amphora & oak. After fermentation it has a rest in a ceramic egg called ‘Bacon’. If that alone is not enough to make you grab a bottle, it’s funky, fragrant and just gorgeous with pure, savoury-edged fruit and lip-smacking sapid acidity driving it forward.
